Easy Lemon Vinaigrette

Eating healthy doesn't have to be hard - or boring! One of my favorite things to "dress up" are salads! You can put almost anything on them and the possibilties of combinations of flavors are endless! But what kind of dressing can you top that delicious salad with that won't cost you a ton of calories? Vinaigrettes are great options for those trying to watch their caloric intake and eat more cleanly. Mix up this super easy vinaigrette for a delicious salad for your family tonight!
- 3 Tablespoons extra virgin olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon oregano
- 1/2 teaspoon minced garlic
1. Whisk together all ingredients and toss with you favorite greens.
Note: I prefer this dressing with baby spinach, sliced strawberries, walnuts, goat cheese, and bacon. Yum! But you can really top it with anything!
Do you know why you should be using European extra virgin olive oil? EVOO from Europe, like Zucchi, has been produced in European countries for thousands of years. During that time, they've cultivated and optimized the olive trees (cultivars) that produce exceptional quality and flavor. These olives can only be harvested between September and early November. Picking them too early would result in bitter olives and waiting too late in the season would produce more of a mild and buttery flavor. 'Extra Virgin Olive Oil' means that the oil was produced without using chemicals - they simply heat and press the fruit (and, yes, an olive is a fruit).
There are also many differences in olive oil depending on the region that it comes from. French olive oil tends to be pale, Italian is dark green, and Greek olive oil is somewhere in the middle. And Spain's olive oil is usually a yellow color. Who knew there were so many differences in olive oil?
So when you're at the store, look for an olive oil that's made in Europe as opposed to America. They've perfected their craft and if you choose a brand like Zucchi, you know you're going to get great flavor from your EVOO.
